Each season, in the two small farm restaurants, Silvana serves organic dishes prepared according to the traditional local recipies and made of certified products from the Farm or from other ecological firms.
 
 
A typical meal includes:
 

Antipasto
Tasty delicatessen made with porks breeded in the farm, along with different kinds of Umbrian home-made bread: pane nociato, torta sul panaro, arvoltoli, brustengo; several kinds of crostini (with mushrooms, truffles or meat sauce); spelt salad; different kinds of legumes: lentils, chick-peas, chickling vetch

Primo piatto
Home-made pasta with eggs (tagliolini, tagliatelle, pappardelle) or without (zagagnotti), with goose sauce, truffle sauce, mushrooms, aromatic herbs;
gnocchi with Pietralunga potatoes; spelt , chick-peas soup, mushrooms soup, carrots soup, nettle soup;
”Spigadoro organic” pasta (spaghetti, penne, farfalle, fusilli) with seasonal vegetables sauces.

Secondo piatto
Several kinds of meat, coming from the farm (duck, goose, chicken, rabbit, turkey, guinea-fowl, pig, lamb): roasted, imporchettate, con l'intingolo, allo spiedo; eggs, fresh and seasoned local cheese.

Contorno
Organic seasonal vegetables coming from the farm gardens.

Dolce
Crostata, torcolo, tozzetti, torciglione, ricciolina, torta di carote, semifreddo croccante.

Liquore della casa
Visner (wild cherries liqueur), vinsanto, nocino, scafurnicchio (wild rose fruits liqueur), fagin (beech leaves and juniper berries liqueur).
